Ingredients

  • Ground lamb - 300 grams
  • Eggplant - 1 medium, sliced into 1 cm rounds
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cinnamon - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Egg - 1 large
  • Almond flour - 30 grams
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Brush the eggplant slices with olive oil on both sides and sprinkle with salt. Place them on a baking sheet and roast for 20 minutes, flipping halfway through.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  4. Add the ground lamb to the skillet and break it up with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the cinnamon, oregano, salt, and black pepper. Remove from heat and let it cool slightly.
  6. In a bowl, combine the cooked lamb mixture with crumbled feta cheese, almond flour, and the egg. Mix until well combined.
  7. Form the mixture into two burger patties.
  8. In the same skillet, add remaining olive oil and heat over medium-high. Cook the burger patties for about 4-5 minutes on each side until fully cooked.
  9. To assemble, place a burger patty on a serving plate and top with roasted eggplant slices. Garnish with fresh parsley and serve.
