Ingredients
- Eggplant - 1 medium, sliced into 1/2 cm rounds
- Ground beef or lamb - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Heavy cream - 2 tablespoons
- Egg - 1 large, beaten
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1/2 cm rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture, then rinse and pat dry.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
- Add the ground meat to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the tomato paste, oregano, cinnamon, salt, and pepper. Cook for another 2-3 minutes until well combined. Remove from heat.
- In a separate bowl, combine the crumbled feta cheese, heavy cream, and beaten egg. Mix until smooth.
- In a baking dish, layer half of the eggplant rounds at the bottom. Spread half of the meat mixture over the eggplant, then add another layer of eggplant.
- Top with the remaining meat mixture and finally pour the feta mixture over the top evenly.
- Drizzle the remaining tablespoon of olive oil over the dish.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let cool for a few minutes before slicing into bite-sized pieces.
