Ingredients

  • Eggplant - 1 medium-sized (about 250g)
  • Ground beef or lamb - 250g
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Heavy cream - 100ml
  • Egg - 1 large
  • Grated Parmesan cheese - 30g
  • Nutmeg - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Slice the eggplant into 1 cm thick rounds, sprinkle with salt, and let it sit for 20 minutes to draw out moisture.
  3. Rinse the eggplant slices, pat them dry with paper towels, and brush them lightly with olive oil.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat, and sauté the chopped onion and garlic until translucent.
  5. Add the ground beef or lamb to the skillet, breaking it apart with a spatula, and cook until browned.
  6. Stir in the tomato paste, oregano, salt, and pepper, and cook for an additional 5 minutes. Remove from heat.
  7. In a separate bowl, whisk together the heavy cream, egg, grated Parmesan cheese, and a pinch of nutmeg to make the béchamel sauce.
  8. In a baking dish, layer half of the eggplant slices on the bottom, followed by the meat mixture, and then the remaining eggplant slices on top.
  9. Pour the béchamel sauce over the layered ingredients evenly.
  10. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  11. Allow to cool for 5-10 minutes before serving. Enjoy your Keto Moussaka!
