Ingredients
- Eggplant - 1 medium-sized (about 250g)
- Ground beef or lamb - 250g
- Onion - 1 small (about 100g), finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Heavy cream - 100ml
- Egg - 1 large
- Grated Parmesan cheese - 30g
- Nutmeg - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- Slice the eggplant into 1 cm thick rounds, sprinkle with salt, and let it sit for 20 minutes to draw out moisture.
- Rinse the eggplant slices, pat them dry with paper towels, and brush them lightly with olive oil.
- In a skillet, heat 1 tablespoon of olive oil over medium heat, and sauté the chopped onion and garlic until translucent.
- Add the ground beef or lamb to the skillet, breaking it apart with a spatula, and cook until browned.
- Stir in the tomato paste, oregano, salt, and pepper, and cook for an additional 5 minutes. Remove from heat.
- In a separate bowl, whisk together the heavy cream, egg, grated Parmesan cheese, and a pinch of nutmeg to make the béchamel sauce.
- In a baking dish, layer half of the eggplant slices on the bottom, followed by the meat mixture, and then the remaining eggplant slices on top.
- Pour the béchamel sauce over the layered ingredients evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
