- Almond flour - 120 grams
- Coconut flour - 30 grams
- Erythritol - 50 grams
- Baking powder - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground nutmeg - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Egg - 1 large
- Unsalted butter - 60 grams, melted
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 30 grams
- Water - 60 ml
- Erythritol (for syrup) - 100 grams
- Cinnamon sticks - 1 small stick
- Orange zest - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, ground cinnamon, ground nutmeg, and salt.
- In another bowl, whisk together the egg, melted butter, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until a dough forms. Fold in the chopped walnuts.
- Shape the dough into small oval cookies, about the size of a golf ball, and place them on the prepared baking sheet.
- Bake for 20 minutes or until golden brown, then remove from the oven and let cool slightly.
- In a saucepan, combine 60 ml of water, 100 grams of erythritol, the cinnamon stick, and orange zest. Bring to a boil and simmer for 5 minutes to create a syrup.
- Dip each warm cookie into the syrup for a few seconds, allowing excess syrup to drip off, and place them on a serving plate.
- Let the cookies absorb the syrup for at least 10 minutes before serving.
