Ingredients

  • Almond flour - 120 grams
  • Coconut flour - 30 grams
  • Erythritol - 50 grams
  • Baking powder - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground nutmeg - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Unsalted butter - 60 grams, melted
  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 30 grams
  • Water - 60 ml
  • Erythritol (for syrup) - 100 grams
  • Cinnamon sticks - 1 small stick
  • Orange zest - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, ground cinnamon, ground nutmeg, and salt.
  3. In another bowl, whisk together the egg, melted butter, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms. Fold in the chopped walnuts.
  5. Shape the dough into small oval cookies, about the size of a golf ball, and place them on the prepared baking sheet.
  6. Bake for 20 minutes or until golden brown, then remove from the oven and let cool slightly.
  7. In a saucepan, combine 60 ml of water, 100 grams of erythritol, the cinnamon stick, and orange zest. Bring to a boil and simmer for 5 minutes to create a syrup.
  8. Dip each warm cookie into the syrup for a few seconds, allowing excess syrup to drip off, and place them on a serving plate.
  9. Let the cookies absorb the syrup for at least 10 minutes before serving.
