Ingredients

  • Almond flour - 100g
  • Coconut flour - 30g
  • Erythritol - 50g
  • Baking powder - 1 tsp
  • Egg - 1 large
  • Unsweetened almond milk - 60ml
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Unsweetened shredded coconut - 20g
  • Butter - 10g (for greasing)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish with butter.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the egg, almond milk, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Fold in the unsweetened shredded coconut into the mixture.
  6. Pour the batter into the greased baking dish and smooth the top with a spatula.
  7. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the Keto Loukoum to cool for a few minutes before cutting it into squares.
