- Erythritol - 50g
- Baking powder - 1 tsp
- Egg - 1 large
- Unsweetened almond milk - 60ml
- Vanilla extract - 1 tsp
- Salt - a pinch
- Unsweetened shredded coconut - 20g
- Butter - 10g (for greasing)
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish with butter.
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the egg, almond milk, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Fold in the unsweetened shredded coconut into the mixture.
- Pour the batter into the greased baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
