- Almond flour - 150g
- Mozzarella cheese (shredded) - 150g
- Cream cheese - 50g
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Cooked lamb (shredded) - 200g
- Garlic (minced) - 2 cloves
- Dried oregano - 1 teaspoon
- Cherry tomatoes (halved) - 100g
- Feta cheese (crumbled) - 50g
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Preheat the oven to 200°C (390°F).
- In a mixing bowl, combine the almond flour, shredded mozzarella, cream cheese, egg, olive oil, salt, and pepper. Mix until a dough forms.
- Place the dough on a baking sheet lined with parchment paper and shape it into a pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 12-15 minutes or until golden brown.
- While the crust is baking, heat a skillet over medium heat and sauté the minced garlic in a tablespoon of olive oil until fragrant.
- Add the shredded lamb, dried oregano, and half of the cherry tomatoes to the skillet. Cook for 5-7 minutes until heated through.
- Remove the crust from the oven and top it with the lamb mixture, remaining cherry tomatoes, and crumbled feta cheese.
- Return the pizza to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley before slicing and serving.
