Ingredients
- Zucchini - 2 medium (about 400g)
- Lamb shoulder - 300g, diced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Tomato puree - 100g
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50g, crumbled
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
- Add the diced lamb to the skillet, browning on all sides for about 5-7 minutes.
- Stir in the tomato puree, dried oregano, dried thyme, salt, and black pepper. Reduce heat and let simmer for 20 minutes, stirring occasionally.
- While the sauce simmers, in a separate pan, lightly sauté the zoodles in a little olive oil over medium heat for 2-3 minutes until slightly softened.
- Once the lamb sauce is ready, combine it with the zoodles in the skillet, tossing gently to coat the zoodles with the sauce.
- Serve hot, topped with crumbled feta cheese and chopped parsley for garnish.
