Ingredients

  • Zucchini - 2 medium (about 400g)
  • Lamb shoulder - 300g, diced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Tomato puree - 100g
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50g, crumbled
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
  3. Add the diced lamb to the skillet, browning on all sides for about 5-7 minutes.
  4. Stir in the tomato puree, dried oregano, dried thyme, salt, and black pepper. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  5. While the sauce simmers, in a separate pan, lightly sauté the zoodles in a little olive oil over medium heat for 2-3 minutes until slightly softened.
  6. Once the lamb sauce is ready, combine it with the zoodles in the skillet, tossing gently to coat the zoodles with the sauce.
  7. Serve hot, topped with crumbled feta cheese and chopped parsley for garnish.
