- Lamb shoulder - 300 grams, cut into chunks
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Lemon juice - 2 tablespoons
- Dried oregano - 1 teaspoon
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, chopped
- Eggs - 4 large
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the lamb chunks, olive oil, minced garlic, lemon juice, oregano, rosemary, salt, and pepper. Mix well to marinate the lamb for at least 15 minutes.
- In an oven-safe skillet, heat a little olive oil over medium heat. Add the marinated lamb and sear until browned on all sides, about 5-7 minutes.
- Add the sliced zucchini and chopped bell pepper to the skillet with the lamb. Stir to combine and cook for an additional 5 minutes.
- Create four small wells in the vegetable-lamb mixture and crack an egg into each well.
- Sprinkle the crumbled feta cheese over the top, then transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the eggs are set to your liking and the lamb is tender.
