- Almond flour - 100 grams
- Psyllium husk - 10 grams
- Butter - 30 grams, melted
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 50 grams
- Chopped almonds - 50 grams
- Sweetener (erythritol or stevia) - 30 grams
- Cinnamon powder - 1 teaspoon
- Water - 100 milliliters
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine almond flour, psyllium husk, melted butter, and vanilla extract. Mix until a dough forms.
- On a baking sheet lined with parchment paper, spread the dough into a thin layer and bake for 15 minutes until lightly golden.
- Remove the baked dough from the oven and let it cool slightly. Once cool, shred the dough into thin strands.
- In another bowl, mix the chopped walnuts, chopped almonds, sweetener, and cinnamon powder together.
- Take a small handful of the shredded dough, place a spoonful of the nut mixture in the center, and roll it up tightly to form a small bundle. Repeat until all dough and filling are used.
- In a saucepan, combine water, lemon juice, and sweetener. Simmer for 5 minutes to create a syrup.
- Place the rolled kataifi on a baking tray and brush with melted butter. Bake for 15-20 minutes until golden brown.
- Once baked, drizzle the syrup over the kataifi and let it soak for a few minutes before serving.
