- Almond flour - 100 grams
- Coconut flour - 20 grams
- Butter - 80 grams
- Eggs - 2 large
- Erythritol - 50 grams
- Vanilla extract - 1 teaspoon
- Unsweetened cocoa powder - 1 tablespoon
- Heavy cream - 200 ml
- Xanthan gum - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine the almond flour, coconut flour, and xanthan gum. In a separate bowl, melt the butter and mix it with erythritol and vanilla extract.
- Add the eggs to the butter mixture and whisk until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough into two equal parts and spread each part onto the prepared baking tray, creating thin layers. Bake for 20-25 minutes or until golden brown. Allow the layers to cool completely.
- While the layers are cooling, prepare the filling by whipping the heavy cream until stiff peaks form. Gently fold in the cocoa powder and a bit of erythritol for sweetness.
- Once the layers are cooled, place one layer on a serving plate and spread the whipped cream filling evenly on top. Place the second layer over the filling.
- Chill in the refrigerator for at least 30 minutes before serving to allow the layers to set.
