Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 20 grams
  • Butter - 80 grams
  • Eggs - 2 large
  • Erythritol - 50 grams
  • Vanilla extract - 1 teaspoon
  • Unsweetened cocoa powder - 1 tablespoon
  • Heavy cream - 200 ml
  • Xanthan gum - 1/2 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, and xanthan gum. In a separate bowl, melt the butter and mix it with erythritol and vanilla extract.
  3. Add the eggs to the butter mixture and whisk until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Divide the dough into two equal parts and spread each part onto the prepared baking tray, creating thin layers. Bake for 20-25 minutes or until golden brown. Allow the layers to cool completely.
  5. While the layers are cooling, prepare the filling by whipping the heavy cream until stiff peaks form. Gently fold in the cocoa powder and a bit of erythritol for sweetness.
  6. Once the layers are cooled, place one layer on a serving plate and spread the whipped cream filling evenly on top. Place the second layer over the filling.
  7. Chill in the refrigerator for at least 30 minutes before serving to allow the layers to set.
