  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Tomato sauce (no added sugar) - 100 grams
  • Feta cheese, crumbled - 50 grams
  • Kalamata olives, pitted and sliced - 30 grams
  • Cucumber, diced - 50 grams
  • Red onion, thinly sliced - 30 grams
  • Bell pepper, diced - 50 grams
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (430°F).
  2. In a large mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, olive oil, salt, and oregano. Mix until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust about 0.5 cm thick.
  4. Bake the crust for 10-12 minutes, or until golden and firm.
  5. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  6. Sprinkle the crumbled feta cheese, Kalamata olives, diced cucumber, sliced red onion, and diced bell pepper over the sauce.
  7. Return the pizza to the oven and bake for an additional 8-10 minutes, until the toppings are heated through.
