- Mozzarella cheese - 150g, shredded

- Cherry tomatoes - 100g, halved
- Cucumber - 50g, diced
- Kalamata olives - 50g, pitted and halved
- Feta cheese - 50g, crumbled
- Fresh oregano - 1 tsp, chopped
- Extra virgin olive oil - for drizzling
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
- Add the egg and shredded mozzarella cheese to the dry ingredients, and mix until well combined.
- Knead the dough briefly until it forms a cohesive ball, then flatten it into a round shape about 1/2 inch thick on the prepared baking sheet.
- Bake the flatbread in the preheated oven for 15 minutes, or until golden brown.
- While the flatbread is baking, prepare the toppings: in a bowl, combine halved cherry tomatoes, diced cucumber, Kalamata olives, crumbled feta cheese, and chopped oregano.
- Once the flatbread is done, remove it from the oven and top it with the prepared vegetable mixture.
- Drizzle with extra virgin olive oil and return to the oven for an additional 5 minutes to warm the toppings.
