  • Mozzarella cheese - 150g, shredded
  • Olive oil - 1 tbsp
  • Cherry tomatoes - 100g, halved
  • Cucumber - 50g, diced
  • Kalamata olives - 50g, pitted and halved
  • Feta cheese - 50g, crumbled
  • Fresh oregano - 1 tsp, chopped
  • Extra virgin olive oil - for drizzling

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  3. Add the egg and shredded mozzarella cheese to the dry ingredients, and mix until well combined.
  4. Knead the dough briefly until it forms a cohesive ball, then flatten it into a round shape about 1/2 inch thick on the prepared baking sheet.
  5. Bake the flatbread in the preheated oven for 15 minutes, or until golden brown.
  6. While the flatbread is baking, prepare the toppings: in a bowl, combine halved cherry tomatoes, diced cucumber, Kalamata olives, crumbled feta cheese, and chopped oregano.
  7. Once the flatbread is done, remove it from the oven and top it with the prepared vegetable mixture.
