- Cucumber - 1 medium, diced
- Tomato - 1 medium, chopped
- Red onion - 1/4, thinly sliced
- Kalamata olives - 50 grams, pitted and halved
- Feta cheese - 100 grams, crumbled
- Extra virgin olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Wash and prepare all the vegetables: dice the cucumber, chop the tomato, and thinly slice the red onion.
- In a large mixing bowl, combine the diced cucumber, chopped tomato, sliced red onion, and halved Kalamata olives.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
- Pour the dressing over the vegetable mixture and toss gently to combine.
- Add the crumbled feta cheese and toss lightly again to incorporate without breaking the feta too much.
- Serve immediately, garnished with fresh chopped parsley.
