Ingredients

  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Red onion - 1/4, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 100 grams, crumbled
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Wash and prepare all the vegetables: dice the cucumber, chop the tomato, and thinly slice the red onion.
  2. In a large mixing bowl, combine the diced cucumber, chopped tomato, sliced red onion, and halved Kalamata olives.
  3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
  4. Pour the dressing over the vegetable mixture and toss gently to combine.
  5. Add the crumbled feta cheese and toss lightly again to incorporate without breaking the feta too much.
