- Almond flour - 200g
- Psyllium husk powder - 2 tbsp
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Egg - 1 large
- Water - 100ml
- Olive oil - 2 tbsp
- Ground lamb or beef - 250g
- Garlic powder - 1 tsp
- Onion powder - 1 tsp
- Dried oregano - 1 tsp
- Cucumber - 1/2, diced
- Tomato - 1, diced
- Red onion - 1/4, thinly sliced
- Feta cheese - 50g, crumbled
- Plain Greek yogurt - 100g
- Fresh dill - 1 tbsp, chopped
- Lemon juice - 1 tbsp
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
- Add the egg, olive oil, and water to the dry ingredients and mix until a dough forms.
- Divide the dough into two equal portions and shape each into a flat round on a baking sheet lined with parchment paper.
- Bake the flatbreads in the preheated oven for 10-12 minutes until golden brown.
- While the flatbreads are baking, heat a skillet over medium heat and add the ground meat.
- Season the meat with garlic powder, onion powder, and dried oregano, then cook until browned and fully cooked, about 5-7 minutes.
- In a small bowl, mix Greek yogurt, chopped dill, and lemon juice to create the tzatziki sauce.
- Once the flatbreads are done baking, remove them from the oven and top each with the cooked meat, diced cucumber, tomato, red onion, and crumbled feta cheese.
- Drizzle the tzatziki sauce over the top and serve immediately.
