Ingredients

  • Almond flour - 200g
  • Psyllium husk powder - 2 tbsp
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Egg - 1 large
  • Water - 100ml
  • Olive oil - 2 tbsp
  • Ground lamb or beef - 250g
  • Garlic powder - 1 tsp
  • Onion powder - 1 tsp
  • Dried oregano - 1 tsp
  • Cucumber - 1/2, diced
  • Tomato - 1, diced
  • Red onion - 1/4, thinly sliced
  • Feta cheese - 50g, crumbled
  • Plain Greek yogurt - 100g
  • Fresh dill - 1 tbsp, chopped
  • Lemon juice - 1 tbsp

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  3. Add the egg, olive oil, and water to the dry ingredients and mix until a dough forms.
  4. Divide the dough into two equal portions and shape each into a flat round on a baking sheet lined with parchment paper.
  5. Bake the flatbreads in the preheated oven for 10-12 minutes until golden brown.
  6. While the flatbreads are baking, heat a skillet over medium heat and add the ground meat.
  7. Season the meat with garlic powder, onion powder, and dried oregano, then cook until browned and fully cooked, about 5-7 minutes.
  8. In a small bowl, mix Greek yogurt, chopped dill, and lemon juice to create the tzatziki sauce.
  9. Once the flatbreads are done baking, remove them from the oven and top each with the cooked meat, diced cucumber, tomato, red onion, and crumbled feta cheese.
  10. Drizzle the tzatziki sauce over the top and serve immediately.
