- Chicken thighs - 300 grams

- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zucchini - 2 medium (about 400 grams)
- Cherry tomatoes - 150 grams
- Cucumber - 1 medium (about 200 grams)
- Red onion - 1/2 small
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Fresh dill - 1 tablespoon, chopped
Steps
- In a bowl, combine olive oil, garlic powder, paprika, dried oregano, salt, and black pepper. Add chicken thighs, coat well, and marinate for at least 15 minutes.
- While chicken is marinating, spiralize the zucchinis to create zoodles and set aside.
- Chop cherry tomatoes, cucumber, and red onion. Mix them in a bowl with chopped parsley and set aside.
- Heat a skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side or until fully cooked and golden brown.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- In a small bowl, mix Greek yogurt, lemon juice, and fresh dill to create the tzatziki sauce.
- To assemble the bowls, divide zoodles between two bowls, top with sliced chicken, veggie mix, crumbled feta cheese, and a generous dollop of tzatziki sauce.
