Ingredients

  • Chicken thighs - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zucchini - 2 medium (about 400 grams)
  • Cherry tomatoes - 150 grams
  • Cucumber - 1 medium (about 200 grams)
  • Red onion - 1/2 small
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh dill - 1 tablespoon, chopped

Steps

  1. In a bowl, combine olive oil, garlic powder, paprika, dried oregano, salt, and black pepper. Add chicken thighs, coat well, and marinate for at least 15 minutes.
  2. While chicken is marinating, spiralize the zucchinis to create zoodles and set aside.
  3. Chop cherry tomatoes, cucumber, and red onion. Mix them in a bowl with chopped parsley and set aside.
  4. Heat a skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side or until fully cooked and golden brown.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  6. In a small bowl, mix Greek yogurt, lemon juice, and fresh dill to create the tzatziki sauce.
  7. To assemble the bowls, divide zoodles between two bowls, top with sliced chicken, veggie mix, crumbled feta cheese, and a generous dollop of tzatziki sauce.
