Ingredients

  • Zucchini - 2 medium-sized (about 400g)
  • Cherry tomatoes - 200g, halved
  • Cucumber - 1 medium (about 200g), diced
  • Feta cheese - 100g, crumbled
  • Kalamata olives - 50g, pitted and halved
  • Red onion - 1/4 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles. If you don't have a spiralizer, you can slice the zucchini thinly.
  2. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, crumbled feta cheese, halved Kalamata olives, and sliced red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
  4. Add the zucchini noodles to the vegetable mixture and pour the dressing over the top.
  5. Gently toss all ingredients together until well combined, ensuring the zucchini noodles are coated with the dressing.
  6. Serve immediately, or let it chill in the refrigerator for 10 minutes for a more refreshing taste.
