Ingredients

  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams, pitted and chopped
  • Spinach - 50 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, whisk the eggs until well combined. Season with salt and black pepper.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Add the chopped spinach and cherry tomatoes to the skillet. Sauté for 2-3 minutes until the spinach is wilted.
  4. Pour the beaten eggs over the vegetables in the skillet. Allow to cook for 3-4 minutes until the edges begin to set.
