- Ground beef - 250 grams
- Ground pork - 250 grams
- Almond flour - 30 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Crushed tomatoes - 200 grams
- Feta cheese - 50 grams, crumbled
- Kalamata olives - 50 grams, sliced
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the ground beef, ground pork, almond flour, egg, minced garlic, chopped onion, parsley, oregano, salt, and black pepper. Mix until well combined.
- Form the mixture into meatballs, about 2.5 cm in diameter.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Brown the meatballs on all sides, about 5-7 minutes.
- Transfer the browned meatballs to a baking dish and bake in the preheated oven for 15 minutes.
- In the same skillet, add the crushed tomatoes and remaining tablespoon of olive oil. Simmer for about 5 minutes to thicken slightly.
- Once the meatballs are done baking, add them to the skillet with the tomato sauce and gently toss to coat.
- Serve the meatballs warm, topped with crumbled feta cheese and sliced Kalamata olives.
