- Butter beans - 200 grams (cooked)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves (minced)
- Onion - 1 medium (finely chopped)
- Tomato puree - 200 grams
- Vegetable broth - 100 ml
- Fresh parsley - 2 tablespoons (chopped)
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 50 grams (crumbled, optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the tomato puree, vegetable broth, dried oregano, salt, and black pepper. Let the sauce simmer for about 5 minutes.
- In a baking dish, combine the cooked butter beans with the tomato sauce and mix well.
- Sprinkle the chopped parsley over the top.
- Bake in the preheated oven for 15-20 minutes until heated through and slightly bubbling.
- If using, remove from the oven and sprinkle crumbled feta cheese on top before serving.
