Ingredients

  • Butter beans - 200 grams (cooked)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves (minced)
  • Onion - 1 medium (finely chopped)
  • Tomato puree - 200 grams
  • Vegetable broth - 100 ml
  • Fresh parsley - 2 tablespoons (chopped)
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 50 grams (crumbled, optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the tomato puree, vegetable broth, dried oregano, salt, and black pepper. Let the sauce simmer for about 5 minutes.
  5. In a baking dish, combine the cooked butter beans with the tomato sauce and mix well.
  6. Sprinkle the chopped parsley over the top.
  7. Bake in the preheated oven for 15-20 minutes until heated through and slightly bubbling.
  8. If using, remove from the oven and sprinkle crumbled feta cheese on top before serving.
