Ingredients
- Zucchini - 2 medium
- Ground beef - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Water - 1/2 cup
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
- In a pan, heat the olive oil over medium heat and add the diced onion, cooking until translucent, about 3-4 minutes.
- Add the minced garlic to the pan and sauté for another minute until fragrant.
- Stir in the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Mix in the tomato paste, oregano, salt, black pepper, and water. Simmer for 5 minutes, allowing the flavors to meld.
- Remove from heat and stir in the chopped parsley and crumbled feta cheese.
- In another pan, lightly sauté the zucchini noodles in a little olive oil for about 2-3 minutes until just tender, then season with salt and pepper.
- Serve the zucchini noodles topped with the beef filling mixture.
