Ingredients

  • Zucchini - 2 medium
  • Ground beef - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Water - 1/2 cup

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
  2. In a pan, heat the olive oil over medium heat and add the diced onion, cooking until translucent, about 3-4 minutes.
  3. Add the minced garlic to the pan and sauté for another minute until fragrant.
  4. Stir in the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
  5. Mix in the tomato paste, oregano, salt, black pepper, and water. Simmer for 5 minutes, allowing the flavors to meld.
  6. Remove from heat and stir in the chopped parsley and crumbled feta cheese.
  7. In another pan, lightly sauté the zucchini noodles in a little olive oil for about 2-3 minutes until just tender, then season with salt and pepper.
  8. Serve the zucchini noodles topped with the beef filling mixture.
