Ingredients

  • Almond flour - 100g
  • Butter, melted - 50g
  • Eggs - 2 large
  • Heavy cream - 200ml
  • Erythritol - 50g
  • Vanilla extract - 1 tsp
  • Baking powder - 1 tsp
  • Cinnamon - 1/2 tsp
  • Salt - 1/4 tsp
  • Water - 100ml

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together eggs, heavy cream, erythritol, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until well combined.
  5. Grease a small baking dish with melted butter and pour half of the almond flour mixture into the dish, spreading it evenly.
  6. Pour the custard filling over the almond flour layer, then cover with the remaining almond flour mixture.
  7. Drizzle the top with the remaining melted butter.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and the center is set.
  9. Once baked, allow to cool for about 10 minutes before slicing and serving.
