- Almond flour - 100g
- Butter, melted - 50g
- Eggs - 2 large
- Heavy cream - 200ml
- Erythritol - 50g
- Vanilla extract - 1 tsp
- Baking powder - 1 tsp
- Cinnamon - 1/2 tsp
- Salt - 1/4 tsp
- Water - 100ml
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, heavy cream, erythritol, and vanilla extract until smooth.
- Gradually fold the dry ingredients into the wet mixture until well combined.
- Grease a small baking dish with melted butter and pour half of the almond flour mixture into the dish, spreading it evenly.
- Pour the custard filling over the almond flour layer, then cover with the remaining almond flour mixture.
- Drizzle the top with the remaining melted butter.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and the center is set.
- Once baked, allow to cool for about 10 minutes before slicing and serving.
