- Almond flour - 100 grams
- Unsalted butter - 50 grams, melted
- Egg - 1 large
- Feta cheese - 150 grams, crumbled
- Cream cheese - 100 grams, softened
- Stevia or erythritol - 2 tablespoons (adjust to taste)
- Vanilla extract - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
- Egg - 1 large (for filling)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, melted butter, 1 egg, and a pinch of salt to form a dough.
- Press the dough into the bottom and up the sides of a small pie dish to form the crust.
- In another bowl, mix the crumbled feta cheese, cream cheese, stevia or erythritol, vanilla extract, baking powder, and 1 egg until smooth.
