Ingredients

  • Almond flour - 100 grams
  • Unsalted butter - 50 grams, melted
  • Egg - 1 large
  • Feta cheese - 150 grams, crumbled
  • Cream cheese - 100 grams, softened
  • Stevia or erythritol - 2 tablespoons (adjust to taste)
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch
  • Egg - 1 large (for filling)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted butter, 1 egg, and a pinch of salt to form a dough.
  3. Press the dough into the bottom and up the sides of a small pie dish to form the crust.
  4. In another bowl, mix the crumbled feta cheese, cream cheese, stevia or erythritol, vanilla extract, baking powder, and 1 egg until smooth.
  5. Pour the feta mixture into the prepared crust and spread it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is lightly golden.
  7. Remove from the oven and allow to cool for a few minutes before slicing and serving.
