Ingredients

  • Feta cheese - 200 grams
  • Cherry tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Zucchini noodles - 400 grams
  • Spinach - 100 grams
  • Oregano - 1 teaspoon, dried
  • Black pepper - to taste
  • Salt - to taste
  • Basil - fresh, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, combine the cherry tomatoes, feta cheese, olive oil, minced garlic, dried oregano, salt, and black pepper.
  3. Bake for 20 minutes, or until the tomatoes are bursting and the feta is soft.
  4. While the feta and tomatoes are baking, spiralize the zucchini to create noodles if not pre-spiralized.
  5. In a large skillet over medium heat, sauté the zucchini noodles for 3-5 minutes until just tender.
  6. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
  7. Remove the baked feta and tomatoes from the oven and mix them well to create a creamy sauce.
  8. Combine the zucchini noodles and spinach with the feta-tomato mixture, tossing until well coated.
  9. Serve warm, garnished with fresh basil.
