Ingredients

  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Spinach - 50 grams, fresh
  • Olive oil - 1 tablespoon
  • Heavy cream - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh dill - 1 tablespoon, chopped

Steps

  1. In a bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the fresh spinach to the skillet and sauté for 1-2 minutes until wilted.
  4. Pour the egg mixture into the skillet over the wilted spinach and cook for about 2-3 minutes, gently stirring the edges to allow uncooked egg to flow to the edges.
