Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese (crumbled) - 100 grams
  • Kalamata olives (pitted and sliced) - 50 grams
  • Cherry tomatoes (halved) - 100 grams
  • Olive oil - 1 tablespoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. Steam the cauliflower for about 5 minutes until tender, then let it cool.
  4. Once cooled, place the cauliflower in a clean kitchen towel and wring out as much moisture as possible.
  5. In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, oregano, garlic powder, salt, and black pepper until well mixed.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 15 minutes, or until it is golden brown and firm.
  8. Remove the crust from the oven and top it with crumbled feta cheese, sliced Kalamata olives, and halved cherry tomatoes.
  9. Drizzle with olive oil and return to the oven for an additional 10 minutes.
  10. Once baked, remove from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.
