- Almond flour - 120 grams
- Coconut flour - 30 grams
- Eggs - 2 large
- Butter - 30 grams, melted
- Erythritol - 20 grams
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Oil for frying - 250 ml
Steps
- In a mixing bowl, combine almond flour, coconut flour, erythritol, and salt.
- In another bowl, whisk together the eggs, melted butter, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Knead the dough for about 2-3 minutes until smooth, then wrap it in plastic wrap and let it rest for 10 minutes.
- Roll out the dough on a lightly floured surface until it's about 1/8 inch thick.
- Cut the rolled dough into strips about 1 inch wide and twist each strip into a bow shape.
- In a deep pan, heat the oil over medium heat until hot, then carefully add the twisted dough pieces in batches.
- Fry until golden brown, about 2-3 minutes per side, then remove and drain on paper towels.
- Once cooled slightly, dust with a little extra erythritol if desired and serve.
