Ingredients

  • Dried split fava beans - 100 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Paprika - 1/2 teaspoon (for garnish)

Steps

  1. Rinse the dried split fava beans under cold water and soak them in water for at least 2 hours or overnight.
  2. Drain the soaked fava beans and place them in a pot with 500 ml of fresh water. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for about 30 minutes, or until the fava beans are tender. Skim off any foam that forms on the surface.
  4. Once cooked, drain the beans and transfer them to a blender or food processor.
  5. Add 2 tablespoons of olive oil, 1 tablespoon of lemon juice, minced garlic, parsley, salt, and pepper to the blender.
  6. Blend until smooth and creamy. If the mixture is too thick, you can add a little more water to reach your desired consistency.
  7. Taste and adjust seasoning if necessary.
  8. Serve the Keto Fava warm, garnished with crumbled feta cheese and a sprinkle of paprika, if desired.
