Ingredients
- Dried split fava beans - 100 grams
- Water - 500 ml
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
- Paprika - 1/2 teaspoon (for garnish)
Steps
- Rinse the dried split fava beans under cold water and soak them in water for at least 2 hours or overnight.
- Drain the soaked fava beans and place them in a pot with 500 ml of fresh water. Bring to a boil over medium heat.
- Reduce the heat and simmer for about 30 minutes, or until the fava beans are tender. Skim off any foam that forms on the surface.
- Once cooked, drain the beans and transfer them to a blender or food processor.
- Add 2 tablespoons of olive oil, 1 tablespoon of lemon juice, minced garlic, parsley, salt, and pepper to the blender.
- Blend until smooth and creamy. If the mixture is too thick, you can add a little more water to reach your desired consistency.
- Taste and adjust seasoning if necessary.
- Serve the Keto Fava warm, garnished with crumbled feta cheese and a sprinkle of paprika, if desired.
