Ingredients

  • Cauliflower rice - 300 grams
  • Lentils (cooked) - 150 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Diced tomatoes (canned) - 200 grams
  • Vegetable broth - 250 ml
  • Oregano (dried) - 1 teaspoon
  • Cumin (ground) - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley (fresh, chopped) - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the cooked lentils, diced tomatoes, vegetable broth, oregano, cumin, paprika, salt, and black pepper. Mix well.
  5. Bring the mixture to a simmer and let it cook for 10 minutes, allowing the flavors to meld.
  6. Stir in the cauliflower rice and cook for an additional 5-7 minutes, until the cauliflower is tender but not mushy.
