Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese, shredded - 150 grams
- Parmesan cheese, grated - 50 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Ground lamb or beef - 200 grams
- Red onion, finely chopped - 50 grams
- Fresh parsley, chopped - 2 tablespoons
- Feta cheese, crumbled - 50 grams
- Black olives, sliced - 30 grams
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 220°C (430°F).
- Rinse the cauliflower and cut it into florets. Steam the florets for about 5-7 minutes until tender, then drain and let cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the processed cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, dried oregano, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick. Bake in the preheated oven for 15-20 minutes until golden and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened.
- Add the ground lamb or beef to the skillet and cook until browned, breaking it up as it cooks. Stir in the chopped parsley, salt, pepper, and lemon juice, cooking for an additional 2 minutes.
- Once the crust is done, remove it from the oven and evenly distribute the meat mixture over the crust. Top with crumbled feta cheese and sliced black olives.
- Return the pizza to the oven and bake for another 8-10 minutes until the cheese is melted and slightly golden.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
