Keto Dolmades
Keto Dolmades are a low-carb twist on the traditional Greek stuffed grape leaves, using cauliflower rice as a filling instead of rice. These savory rolls are packed with flavor and make for a perfect healthy snack or appetizer.

Ingredients
- Grape leaves - 12 large leaves, jarred or fresh
- Cauliflower rice - 200 grams
- Ground lamb or beef - 150 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Water - 200 milliliters
Steps
- Prepare the grape leaves by rinsing them under cold water if using jarred ones. If using fresh leaves, blanch them in boiling water for 2-3 minutes until soft, then drain.
- In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the chopped onion for about 3-4 minutes until translucent.
- Add minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
- In a mixing bowl, combine the sautéed onion and garlic, cauliflower rice, ground lamb or beef, dill, parsley, salt, and pepper. Mix until well combined.
- Lay a grape leaf on a flat surface, vein side up. Place about 1-2 tablespoons of the filling near the stem end of the leaf. Fold the sides over the filling and roll up tightly from the stem end to the tip. Repeat with remaining leaves and filling.
- In a large pot, add the remaining tablespoon of olive oil and the water. Place the rolled dolmades seam side down in the pot. Drizzle lemon juice over the top.
- Cover with a lid and simmer on low heat for about 30 minutes until the filling is cooked through and the flavors meld together.
- Remove from heat and let cool slightly before serving. Enjoy warm or at room temperature.
