Ingredients
- Almond flour - 100 grams
- Psyllium husk - 10 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Egg - 1 large
- Water - 60 ml
- Cherry tomatoes - 150 grams, diced
- Feta cheese - 50 grams, crumbled
- Kalamata olives - 30 grams, pitted and sliced
- Extra virgin olive oil - 2 tablespoons
- Oregano - 1 teaspoon
- Fresh basil - a handful, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the almond flour, psyllium husk, baking powder, and salt together until well combined.
- Add the egg and water to the dry ingredients, mixing until a dough forms.
- Form the dough into two flat rounds (about 1 cm thick) and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until golden brown and firm to the touch.
- While the bread is baking, prepare the toppings by combining the diced cherry tomatoes, crumbled feta cheese, sliced olives, olive oil, oregano, and chopped basil in a bowl. Stir well to combine.
- Once the bread is baked, remove it from the oven and let it cool slightly before topping each piece with the tomato and feta mixture.
