Ingredients

  • Almond flour - 100 grams
  • Psyllium husk - 10 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Egg - 1 large
  • Water - 60 ml
  • Cherry tomatoes - 150 grams, diced
  • Feta cheese - 50 grams, crumbled
  • Kalamata olives - 30 grams, pitted and sliced
  • Extra virgin olive oil - 2 tablespoons
  • Oregano - 1 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the almond flour, psyllium husk, baking powder, and salt together until well combined.
  3. Add the egg and water to the dry ingredients, mixing until a dough forms.
  4. Form the dough into two flat rounds (about 1 cm thick) and place them on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 15-20 minutes or until golden brown and firm to the touch.
  6. While the bread is baking, prepare the toppings by combining the diced cherry tomatoes, crumbled feta cheese, sliced olives, olive oil, oregano, and chopped basil in a bowl. Stir well to combine.
  7. Once the bread is baked, remove it from the oven and let it cool slightly before topping each piece with the tomato and feta mixture.
