Ingredients
- Cauliflower - 400 grams
- Olive oil - 3 tablespoons
- Fresh spinach - 150 grams
- Chard or Swiss chard - 150 grams
- Fresh dill - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Begin by washing the spinach and chard thoroughly to remove any dirt and grit. Drain and set aside.
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Alternatively, you can grate it using a box grater.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the washed spinach and chard to the skillet and cook for 5-7 minutes until wilted. Stir in the chopped dill, salt, and black pepper.
- In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the cauliflower rice and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.
- Once the greens are cooked, add the lemon juice and stir well to combine. Remove from heat.
- To serve, place a generous portion of cauliflower rice on each plate, top with the sautéed greens, and sprinkle with crumbled feta cheese if desired.
