- Zucchini - 150 grams
- Eggplant - 150 grams
- Bell pepper (red or yellow) - 100 grams
- Cherry tomatoes - 100 grams
- Olive oil - 3 tablespoons
- Garlic (minced) - 2 cloves
- Fresh oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Feta cheese (crumbled) - 50 grams
- Fresh parsley (chopped) - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Wash and slice the zucchini and eggplant into 1 cm thick rounds.
- Chop the bell pepper into bite-sized pieces and halve the cherry tomatoes.
- In a large mixing bowl, combine the zucchini, eggplant, bell pepper, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and add the minced garlic, oregano, salt, and pepper. Toss to coat evenly.
- Spread the vegetable mixture onto a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Once done, remove from the oven and sprinkle crumbled feta cheese and chopped parsley on top.
- Serve warm as a hearty breakfast.
