Ingredients

  • Zucchini - 150 grams
  • Eggplant - 150 grams
  • Bell pepper (red or yellow) - 100 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 2 cloves
  • Fresh oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Feta cheese (crumbled) - 50 grams
  • Fresh parsley (chopped) - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and slice the zucchini and eggplant into 1 cm thick rounds.
  3. Chop the bell pepper into bite-sized pieces and halve the cherry tomatoes.
  4. In a large mixing bowl, combine the zucchini, eggplant, bell pepper, and cherry tomatoes.
  5. Drizzle the olive oil over the vegetables and add the minced garlic, oregano, salt, and pepper. Toss to coat evenly.
  6. Spread the vegetable mixture onto a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  8. Once done, remove from the oven and sprinkle crumbled feta cheese and chopped parsley on top.
  9. Serve warm as a hearty breakfast.
