- Almond flour - 150 grams
- Coconut oil - 50 grams, melted
- Eggs - 2 large
- Cream cheese - 100 grams, softened
- Heavy cream - 100 ml
- Sweetener (erythritol or stevia) - 30 grams
- Vanilla extract - 1 teaspoon
- Cinnamon - 1 teaspoon
- Salt - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine almond flour, melted coconut oil, one egg, and salt to form a dough.
- Press the dough into the bottom and sides of a greased 9-inch (23 cm) pie dish to create a crust.
- In another bowl, mix the softened cream cheese, heavy cream, sweetener, vanilla extract, and the other egg until smooth and creamy.
- Pour the cream cheese mixture into the crust evenly.
- Sprinkle cinnamon over the top of the filling.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden and the filling is set.
- Let it cool for 10 minutes before slicing and serving.
