Ingredients

  • Almond flour - 150 grams
  • Coconut oil - 50 grams, melted
  • Eggs - 2 large
  • Cream cheese - 100 grams, softened
  • Heavy cream - 100 ml
  • Sweetener (erythritol or stevia) - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Salt - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine almond flour, melted coconut oil, one egg, and salt to form a dough.
  3. Press the dough into the bottom and sides of a greased 9-inch (23 cm) pie dish to create a crust.
  4. In another bowl, mix the softened cream cheese, heavy cream, sweetener, vanilla extract, and the other egg until smooth and creamy.
  5. Pour the cream cheese mixture into the crust evenly.
  6. Sprinkle cinnamon over the top of the filling.
  7. Bake in the preheated oven for 25-30 minutes or until the crust is golden and the filling is set.
  8. Let it cool for 10 minutes before slicing and serving.
