Ingredients
- Almond flour - 150 grams
- Mozzarella cheese - 200 grams, shredded
- Cream cheese - 50 grams
- Egg - 1 large
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Chopped walnuts - 50 grams
- Chopped pistachios - 30 grams
- Ground cinnamon - 1 tsp
- Erythritol sweetener - 2 tbsp
- Olive oil - 1 tbsp
- Unsweetened almond milk - 2 tbsp
- Honey (sugar-free) - 1 tbsp
Steps
- Preheat the oven to 200°C (400°F).
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave for 30 seconds, stir, and heat for another 30 seconds until fully melted and combined.
- In a large bowl, mix the almond flour, baking powder, and salt. Add the melted cheese mixture and the egg, and mix until a dough forms.
- Spread the dough onto a parchment-lined pizza stone or baking tray, forming a 10-inch round crust. Bake for 15 minutes until golden brown.
- In a small bowl, mix the chopped walnuts, chopped pistachios, ground cinnamon, and erythritol sweetener.
- Remove the crust from the oven and brush with olive oil. Evenly sprinkle the nut mixture over the crust.
- Drizzle the sugar-free honey over the top of the nuts.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the nuts are toasted and fragrant.
- Allow to cool slightly before slicing. Serve warm.
