Ingredients

  • Almond flour - 100 grams
  • Butter, melted - 50 grams
  • Swerve sweetener - 30 grams
  • Ground cinnamon - 1 teaspoon
  • Chopped walnuts - 50 grams
  • Chopped pistachios - 25 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Sugar-free syrup (like monk fruit syrup) - 2 tablespoons
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted butter, Swerve sweetener, ground cinnamon, and salt until a dough forms.
  3. Add the egg and vanilla extract to the dough and mix until well combined.
  4. In a separate bowl, mix the chopped walnuts, chopped pistachios, and sugar-free syrup.
  5. Take half of the dough and press it into the bottom of a greased mini muffin tin to form a base layer.
  6. Spoon the nut mixture evenly over the dough base in each muffin cup.
  7. Take the remaining dough and flatten it into small discs to cover the nut mixture, pressing down gently.
  8. Bake in the preheated oven for 20 minutes, or until golden brown.
  9. Allow to cool slightly before carefully removing from the muffin tin.
  10. Serve warm or at room temperature, drizzled with additional sugar-free syrup if desired.
