  • Eggs - 2 large
  • Lemon juice - 60 ml (freshly squeezed)
  • Chicken broth - 240 ml (low-sodium)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shredded chicken breast to the skillet and stir well to combine with the garlic. Season with salt and pepper. Cook for about 3-4 minutes until heated through.
  3. Pour in the chicken broth and bring to a gentle simmer. Let it cook for about 5 minutes.
