Ingredients

  • Cauliflower rice - 300 grams
  • Chicken broth - 500 ml
  • Eggs - 2 large
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring the chicken broth to a gentle simmer over medium heat.
  2. Add the cauliflower rice to the simmering broth and cook for about 10-12 minutes, or until the cauliflower is tender.
  3. While the cauliflower rice is cooking, in a bowl, whisk together the eggs, lemon juice, a pinch of salt, and black pepper until well combined.
  4. Once the cauliflower rice is cooked, slowly ladle a small amount of the hot broth into the egg mixture while whisking continuously to temper the eggs.
  5. Gradually add the tempered egg mixture back into the saucepan with the cauliflower rice, stirring constantly until the sauce thickens slightly, about 2-3 minutes.
  6. Remove from heat, stir in the olive oil and chopped parsley, and adjust seasoning with more salt and pepper if needed.
  7. Serve hot, garnished with additional parsley if desired.
