- Ground lamb or beef - 250 grams
- Zucchini - 2 medium, spiralized
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Egg - 1 large
- Almond flour - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon - 1, for serving
Steps
- In a mixing bowl, combine the ground meat, chopped red onion, minced garlic, parsley, mint, egg, almond flour, oregano, salt, and black pepper. Mix until well combined.
- Shape the mixture into small meatballs, about 2.5 cm in diameter.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
- While the meatballs are cooking, heat the remaining olive oil in another skillet over medium heat. Add the spiralized zucchini and sauté for 3-4 minutes until just tender. Season with salt and pepper to taste.
- Serve the keftedes on a bed of sautéed zucchini, drizzled with lemon juice.
