Ingredients

  • Ground lamb or beef - 250 grams
  • Zucchini - 2 medium, spiralized
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Egg - 1 large
  • Almond flour - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon - 1, for serving

Steps

  1. In a mixing bowl, combine the ground meat, chopped red onion, minced garlic, parsley, mint, egg, almond flour, oregano, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into small meatballs, about 2.5 cm in diameter.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
  4. While the meatballs are cooking, heat the remaining olive oil in another skillet over medium heat. Add the spiralized zucchini and sauté for 3-4 minutes until just tender. Season with salt and pepper to taste.
  5. Serve the keftedes on a bed of sautéed zucchini, drizzled with lemon juice.
