Ingredients

  • Ground beef - 250 grams
  • Ground lamb - 250 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/4 small, thinly sliced
  • Greek yogurt - 150 grams
  • Lemon juice - 1 tablespoon
  • Dill - 1 tablespoon, fresh or 1 teaspoon dried

Steps

  1. In a large bowl, combine the ground beef, ground lamb, almond flour, egg, minced garlic, chopped onion, parsley, mint, oregano, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about the size of a golf ball.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through.
  4. While the meatballs are cooking, prepare the cucumber salad by combining the diced cucumber, diced tomato, and sliced red onion in a bowl. Drizzle with 1 tablespoon of olive oil and toss to combine.
  5. For the tzatziki sauce, mix the Greek yogurt, lemon juice, dill, and a pinch of salt in a separate bowl until smooth.
  6. Once the meatballs are cooked, serve them on a platter alongside the cucumber salad and tzatziki sauce.
