- Ground beef - 250 grams
- Ground lamb - 250 grams
- Almond flour - 50 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1/4 small, thinly sliced
- Greek yogurt - 150 grams
- Lemon juice - 1 tablespoon
- Dill - 1 tablespoon, fresh or 1 teaspoon dried
Steps
- In a large bowl, combine the ground beef, ground lamb, almond flour, egg, minced garlic, chopped onion, parsley, mint, oregano, salt, and black pepper. Mix until well combined.
- Form the mixture into small meatballs, about the size of a golf ball.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through.
- While the meatballs are cooking, prepare the cucumber salad by combining the diced cucumber, diced tomato, and sliced red onion in a bowl. Drizzle with 1 tablespoon of olive oil and toss to combine.
- For the tzatziki sauce, mix the Greek yogurt, lemon juice, dill, and a pinch of salt in a separate bowl until smooth.
- Once the meatballs are cooked, serve them on a platter alongside the cucumber salad and tzatziki sauce.
