Ingredients
- Zucchini - 200 grams, grated
- Carrot - 100 grams, grated
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Chickpea flour - 50 grams
- Fresh parsley - 15 grams, chopped
- Fresh mint - 10 grams, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Water - 2 tablespoons
Steps
- In a mixing bowl, combine the grated zucchini, grated carrot, chopped red onion, and minced garlic. Mix well and let it sit for 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the vegetable mixture to remove excess water and return it to the bowl.
- Add chickpea flour, chopped parsley, chopped mint, olive oil, salt, black pepper, paprika, baking powder, and water to the bowl. Mix until all ingredients are well combined.
- Heat a non-stick frying pan over medium heat and add a tablespoon of olive oil.
- Using a tablespoon, scoop the mixture and form small patties. Place them in the hot pan, cooking in batches if necessary.
- Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
- Once cooked, transfer the keftedes to a paper towel-lined plate to drain excess oil. Serve warm with a side of vegan tzatziki or a fresh salad.
