Ingredients

  • Zucchini - 200 grams, grated
  • Carrot - 100 grams, grated
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpea flour - 50 grams
  • Fresh parsley - 15 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 2 tablespoons

Steps

  1. In a mixing bowl, combine the grated zucchini, grated carrot, chopped red onion, and minced garlic. Mix well and let it sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze the vegetable mixture to remove excess water and return it to the bowl.
  3. Add chickpea flour, chopped parsley, chopped mint, olive oil, salt, black pepper, paprika, baking powder, and water to the bowl. Mix until all ingredients are well combined.
  4. Heat a non-stick frying pan over medium heat and add a tablespoon of olive oil.
  5. Using a tablespoon, scoop the mixture and form small patties. Place them in the hot pan, cooking in batches if necessary.
  6. Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Once cooked, transfer the keftedes to a paper towel-lined plate to drain excess oil. Serve warm with a side of vegan tzatziki or a fresh salad.
