Ingredients

  • Whole grain bread - 4 slices
  • Kefalotyri cheese - 150 grams, sliced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh oregano - 1 teaspoon, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Black pepper - to taste
  • Tomatoes - 1 medium, sliced
  • Arugula - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Lay the slices of whole grain bread on a baking sheet and brush one side with olive oil.
  3. Place the bread in the oven and toast for about 5-6 minutes until lightly golden.
  4. Remove the baking sheet from the oven and flip the bread slices over.
  5. Top each slice with slices of Kefalotyri cheese, chopped oregano, thyme, and a sprinkle of black pepper.
  6. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and slightly bubbling.
  7. While the toast is baking, prepare the salad by combining sliced tomatoes and arugula in a bowl.
  8. Drizzle with olive oil and season with a pinch of salt and pepper.
