Ingredients

  • 4 large eggs
  • 100 grams Kefalotyri cheese, grated
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium bowl, crack the eggs and whisk them together until well combined. Season with salt and pepper.
  2. In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.
  4. Pour the whisked eggs into the skillet over the onion and garlic mixture. Let it cook for about 1-2 minutes without stirring, allowing the edges to set.
  5. Using a spatula, gently stir the eggs, incorporating the onion and garlic. Continue to cook until the eggs are mostly set but still slightly runny.
  6. Sprinkle the grated Kefalotyri cheese evenly over the eggs and gently fold it in. Cook for another 1-2 minutes until the cheese is melted and eggs are cooked to your liking.
  7. Remove from heat, garnish with fresh parsley, and serve immediately.
