- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- cinnamon - 1/4 teaspoon
- bay leaf - 1
- Greek yogurt - 200 grams
- honey - 2 tablespoons
- walnuts - 30 grams, chopped
- fresh mint - for garnish
Steps
- In a pot, combine the pork fat, water, salt, black pepper, cinnamon, and bay leaf. Bring to a simmer over medium heat.
- Reduce the heat to low and cook for about 45 minutes, stirring occasionally, until the pork fat has rendered down and the mixture thickens slightly.
- Remove from heat and let it cool, then strain the mixture to separate the solid fat from the liquid. Discard the solids and keep the liquid fat.
- In a bowl, mix the Greek yogurt with honey until well combined.
- To serve, place a generous dollop of the honeyed yogurt in a small bowl, drizzle with the rendered pork fat, and sprinkle with chopped walnuts.
- Garnish with fresh mint leaves and serve immediately.
