Ingredients

  • pork fat - 150 grams
  • water - 100 ml
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • cinnamon - 1/4 teaspoon
  • bay leaf - 1
  • Greek yogurt - 200 grams
  • honey - 2 tablespoons
  • walnuts - 30 grams, chopped
  • fresh mint - for garnish

Steps

  1. In a pot, combine the pork fat, water, salt, black pepper, cinnamon, and bay leaf. Bring to a simmer over medium heat.
  2. Reduce the heat to low and cook for about 45 minutes, stirring occasionally, until the pork fat has rendered down and the mixture thickens slightly.
  3. Remove from heat and let it cool, then strain the mixture to separate the solid fat from the liquid. Discard the solids and keep the liquid fat.
  4. In a bowl, mix the Greek yogurt with honey until well combined.
  5. To serve, place a generous dollop of the honeyed yogurt in a small bowl, drizzle with the rendered pork fat, and sprinkle with chopped walnuts.
  6. Garnish with fresh mint leaves and serve immediately.
