Ingredients
- Pork shoulder, diced - 200 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Ripe tomatoes, chopped - 400 grams
- Eggs - 4 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Oregano, dried - 1 teaspoon
- Feta cheese, crumbled - 50 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- Heat the olive oil in a large skillet over medium heat. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.
- Add the chopped onion and minced garlic to the skillet, and sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the chopped tomatoes, salt, black pepper, and oregano. Cook for about 10 minutes, allowing the tomatoes to soften and create a sauce.
- Create four small wells in the mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
- Once the eggs are cooked, remove from heat and sprinkle with crumbled feta cheese and chopped parsley before serving.
