  • Ripe tomatoes, chopped - 400 grams
  • Eggs - 4 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Oregano, dried - 1 teaspoon
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the skillet, and sauté until the onion becomes translucent, about 3-4 minutes.
