Ingredients

  • Pork shoulder - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Potatoes - 400 grams, diced
  • Water - 250 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  2. Add the pork shoulder to the pot, seasoning it with paprika, oregano, salt, and black pepper. Sear the meat on all sides until browned.
  3. Pour in the water, cover the pot, and reduce the heat to low. Let it simmer for about 45 minutes until the pork is tender.
  4. Meanwhile, preheat the oven to 200°C (400°F). Toss the diced potatoes with olive oil, salt, and pepper in a baking dish.
  5. Roast the potatoes in the preheated oven for 25-30 minutes, stirring halfway through until golden and crispy.
  6. Once the pork is cooked, remove it from the pot and shred it using two forks. Return the shredded pork to the pot and stir in the lemon juice.
  7. Serve the Kavourmas over the roasted potatoes, garnished with fresh parsley.
