  • Eggs - 4 large
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced pork shoulder and cook for about 10 minutes, stirring occasionally until browned.
  3. Add the chopped red onion and minced garlic to the skillet, cooking for another 5 minutes until the onion is translucent.
  4. Stir in the sliced green olives, oregano, salt, and black pepper, and cook for an additional 5 minutes, allowing the flavors to meld.
  5. In a separate bowl, beat the eggs and season with a pinch of salt and pepper.
  6. Pour the beaten eggs over the pork mixture in the skillet, reducing the heat to low.
  7. Cook gently until the eggs are set, about 5-7 minutes, stirring occasionally to scramble.
