- Pork shoulder - 250 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Eggs - 4 large
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, dried oregano, paprika, black pepper, and salt. Stir for another minute until fragrant.
- Cut the pork shoulder into small cubes and add them to the skillet. Cook until browned on all sides, about 10 minutes.
- Reduce the heat to low, cover the skillet, and let it simmer for 20 minutes, stirring occasionally until the pork is tender.
- While the pork is cooking, in another skillet, crack the eggs and cook them to your preference (sunny side up or scrambled).
- Once the pork is done, remove from heat and stir in the crumbled feta cheese and chopped parsley.
- Serve the pork mixture hot, topped with the cooked eggs.
