Ingredients

  • Pork shoulder - 250 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 4 large

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, dried oregano, paprika, black pepper, and salt. Stir for another minute until fragrant.
  3. Cut the pork shoulder into small cubes and add them to the skillet. Cook until browned on all sides, about 10 minutes.
  4. Reduce the heat to low, cover the skillet, and let it simmer for 20 minutes, stirring occasionally until the pork is tender.
  5. While the pork is cooking, in another skillet, crack the eggs and cook them to your preference (sunny side up or scrambled).
  6. Once the pork is done, remove from heat and stir in the crumbled feta cheese and chopped parsley.
  7. Serve the pork mixture hot, topped with the cooked eggs.
