  • Feta cheese - 100 grams, crumbled
  • Eggs - 4 large
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced red onion and sauté for 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for another 1 minute until fragrant.
  4. Add the diced bell pepper and zucchini to the skillet, cooking for about 5 minutes until they begin to soften.
