Ingredients

  • Pork shoulder - 300 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned white beans - 400 grams, drained and rinsed
  • Vegetable broth - 250 ml
  • Bay leaf - 1
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and pork cubes to the pot. Cook until the pork is browned on all sides, about 8-10 minutes.
  3. Stir in the tomato paste and cook for another 2 minutes, allowing the flavors to meld.
  4. Add the drained beans, vegetable broth, bay leaf, oregano, salt, and black pepper to the pot. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 30-40 minutes, stirring occasionally, until the pork is tender.
  6. Remove the bay leaf, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
