- Pork shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomato paste - 2 tablespoons
- Canned white beans - 400 grams, drained and rinsed
- Vegetable broth - 250 ml
- Bay leaf - 1
- Oregano - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and pork cubes to the pot. Cook until the pork is browned on all sides, about 8-10 minutes.
- Stir in the tomato paste and cook for another 2 minutes, allowing the flavors to meld.
- Add the drained beans, vegetable broth, bay leaf, oregano, salt, and black pepper to the pot. Stir well to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 30-40 minutes, stirring occasionally, until the pork is tender.
- Remove the bay leaf, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
